Starting this in hopes of tracking recipes, food info etc. better. I do all my grocery shopping on Tuesdays- that has always been the best day for me. Mondays always seem to hectic, and if it gets too late in the week I never end up going.

I will post the menu for the week, followed by the grocery items I will need. I only shop at Kroger and Costco- and I will start doing Kroger online in hopes of spending less time AT the store and putting items in the cart that I never knew i needed.

For breakfasts I usually do a couple items I rotate:
--3X our pancake recipe (I will share and I freeze whatever the kids don't eat and will get 2 mornings out of it)
--waffles
--scrambled eggs/toast
--cereal
--oatmeal
-- super hero muffin (D and I only...I make a batch then stick them in the fridge in sandwich baggies to grab and go

Lunch-
sandwichs for kids (pbj, tuna, meat)
gummy snack from costco
fruit
juice box
leftovers etc

Dinner
Tuesday- White chicken Chili , Hawaiian rolls (1 container)

Wednesday- Tortellini Sausage Soup,  Hawaiian Rolls (1 container) (x2, sisters and guest coming)

Thursday- Baked Chimichangas (recipe below)

Friday- Date night/macaroni or pizza for kids/ or leftovers

Saturday- left overs or date night

Sunday- Roast (recipe below), potatoes, frozen veggie, rolls,

Monday- burritos (left over tortillas, 1lb beef, tomato, lettuce, sour cream,


Recipes
Baked Chimichangas-  (makes about 12) 
1lb ground beef
1 medium onion
2 cloves garlic
2 cups mexi cheese
16oz refried beans
4.5 oz chopped green chiles
1/2 cup picante sauce
flour tortillas (12)

  1. Cook frist 2 in large skillet over medium high heat 8-10 minutes or until beef is no longer pink. Remove from heat and drain.
  2. Stir 1.5 cups cheese, beans, chiles, and picante sauce into beef mixture. Place 1/4 cup beef mixture just below center of each tortilla. Fold oppostite sides of tortilla over filling forming restangels. Secure with toothpicks
  3. Place on a baking sheet, coat each one iwth cooking spray. 
  4. Bake at 425 for 8 minutes, turn and then bake 5 more minutes. 

Roast-
Rump Roast
Cream of mushroom
cream of celery
dry onion soup mix

1. Double foil up to be able to wrap entire roast sealing if from air
2. empty cream of mush and 1/2 of dry onion soup packet onto foil, lay roast on top, empty cream of celery and rest of dry onion soup packet
3. seal roast
4. cook 350 degrees for 3-4 hours. When done roast will be surrounded by gravy for mashed potatoes
